Starting from the base, we have two layers of jasmine tea chiffon, filled with an umami-rich jasmine cream. Chiffon cake always reminds me of my childhood, and this soft, fluffy sponge is sure to bring back nostalgic memories. At the center, you’ll find a layer of yuzu compote jam with chewy mochi for a burst of citrusy brightness. The top half of the cake is made of 15 delicate layers of crepes, layered with yuzu cream and fresh pomelo. And because we can never have enough fresh fruit, we’ve topped it off with even more juicy pomelo! Each bite delivers a perfect balance of soft and creamy textures, juicy citrus notes, and chewy mochi—bringing together jasmine, yuzu, and pomelo in a truly unique experience!

Each slice is 1/8 of an 8 inch cake, serves 1-2 people.
