Our Story

Fankery was founded in 2022 by Cathy Fan, who first turned to baking as a way to heal after a sudden 12kg weight gain caused by hypothyroidism at the age of 21. Baking became therapy, and her deep love for mochi inspired her to start creating desserts she craved but couldn’t find on the market: East-meets-West treats that were nostalgic, textural, and joyfully different.

What began as a humble side hustle in her home kitchen quickly became a cult favourite. Within months, Fankery’s mochi-filled Basque cheesecakes were on everyone’s lips, and Fankery evolved into a pop-up bakery operating from a commercial space, drawing loyal fans at every event.

In May 2025, Fankery opened the doors to its flagship store in Newmarket, Auckland - a space built not just for food, but for feeling.

Fankery isn’t your typical bakery. Each dessert tells a story - a personal blend of flavour, texture, and memory. Just as baking helped Cathy heal, Fankery was built on the belief that food has the power to bring people together, to create comfort, and to spark moments worth remembering.
